Finca Las Camelias is a farm located in La Libertad, Huehuetenango, Guatemala. The farm has 15 hectares and is located at about 1,790 meters above sea level. The lot is mainly made up of the Caturra, Catuai and Bourbon varieties. The Las Camelias batch uses Anaerobic fermentation. Once the coffee is harvested and transferred to the mill where the coffee is processed, the ripe cherries are fermented for 36 hours in tanks without water. It is subsequently distributed in African beds and left to dry for 20 days at a density of 16kg/m2. Throughout this time, the coffee is moved 5 times in a day, depending on the weather, and is covered at night to protect it.
